I am a bit obsessed with this recipe. I have made it for both breakfast and dinner, in various ways, and I really love it!
Here’s the basic recipe:
couple generous handfuls of shredded cabbage
2-3 sliced Spring onions
8 - 10 eggs
1 teaspoon toasted sesame oil
1 generous tablespoon coconut aminos (or tamari)
3 tablespoons coconut flour
1 teaspoon baking powder (bi-carb/baking soda would work, too)
some cubes of bacon or ham, if desired
some black and/or white sesame seeds
coconut oil for frying
Mix all ingredents in a bowl until well-incorporated. Heat oil in a skillet and add large spoonfuls once hot; cook on both sides then remove to cool a bit before serving.
Serve with kimchi, toasted seaweed, mayo, teriyaki, extra Spring onions…..YUM!
I make extra so I can have them again the next day.
