This was the most wonderful dinner I've had in a while, and best of all, I didn't have to
make it! My partner came home with a fresh snapper and created a beautiful Thai Fish Curry....
Heat a generous amount of oil in a pan (something like grape seed oil) and, once hot, fry the whole fish in it on both sides (we removed the head because it wouldn't fit in the pan, but will use it for fish stock later). Set the fried fish aside and remove some of the oil. Place chopped veggies of choice in the pan and cook (we used carrot, broccoli, cauliflower and potato), add Thai yellow curry paste and some coconut milk or cream. Pour the curry over the fish, top with coriander and serve.
