I know this seems like a silly recipe to post this time of year, but it's been cold the last few days! Ingredients: Duck fat or olive oil 1 x onion, chopped 2 x garlic, minced 1 large carrot, sliced or diced 1 piece celery, diced (optional) 1 - 1 1/2L chicken stock/broth (more if you like a thinner soup) Salt & pepper Dash of hot sauce Shredded chicken (from previously roasted chook) Juice of one lemon 1/2 - 1 teaspoon cumin Zoodles (zucchini noodles) Method: Heat fat/oil in heavy-bottom pan. Sautee onions, carrots and celery until golden, add garlic and cook for another minute. Add stock, salt, pepper, hot sauce, cumin and lemon to the pot. Shred left over chicken and add it to the pot, bring to a boil. Reduce to a simmer and add zoodles. Cook until zucchini noodles are just tender. Turn off heat.
Serve hot with fresh chopped parsley if desired. Enjoy - N x
