One-skillet Family Pancake (low-carb)


This is my family pancake, it goes in the oven so you don't have to stand at the stove pouring and flipping pancakes. It's also gluten free (can be made dairy-free too, but not nut- or egg-free). Ingredients: 4 eggs 3/4 cup almond meal (or other nut meal) 3/4 cup milk (could use coconut milk instead) 1 teaspoon vanilla 2 tablespoons honey or sweetener of choice Handful of berries (these are last year's mulberries I found in the freezer) 4 tablespoons butter Method: Preheat oven to 200C/425F. Mix all ingredients except butter and berries in a bowl. Heat an oven-proof skillet on medium high. Put butter in and melt it; turn heat off. Pour in almond meal mixture and scatter berries around. Place in oven and bake 20 - 25 minutes.

To serve slice the pancake, top with thick cream/whipped coconut cream, cinnamon and more berries. Enjoy - N x
