Nourishing chicken and veg soup for dinner tonight - my daughter's request.....
Olive oil Chicken thighs x 4, cooked and chopped Onion x 1, chopped Carrot x 2, chopped Zucchini x 1, chopped Garlic cloves x 2, crushed 1 litre chicken stock 1 tablespoon hot sauce Juice of 1 lemon Pinch of cumin Salt and pepper to taste
Saute onions in olive oil, then add carrots and cook a few minutes. Add zucchini and garlic and cook for another few minutes. Add the rest of the ingredients and bring to a boil. Taste for seasoning.
