Breakfast is my favourite meal of the day! It usually consists of leftover dinner with a fried egg or two on top and ferments on the side.
This breakfast is vegetable curry, two eggs fried in butter, purple sauerkraut, Greek yogurt, fermented raisin chutney and kasundi (spicy Indian chutney my partner makes once a year in the middle of Summer - enough for the whole year).
It only take 10-15 minutes to prepare, mostly that's the eggs frying, the ferments are in the fridge ready to go when I am and I just heat the leftovers in the frypan after the eggs are done....easy and fast (and nutritious).
I'm full until lunch with breakfasts like this and I never have hypos because they tend to require very little insulin and are high in healthy fats and protein.
