I made this frittata today before work with fresh, locally-made goat's cheese that was gifted to me...it was divine!
INGREDIENTS:
Olive oil Small onion, chopped 4 stems kale, chopped 4 stems silverbeet/chard, chopped 6 eggs 1/3 cup milk Salt & pepper to Handful grated cheddar cheese Cherry tomatoes, halved Goat's cheese
METHOD:
Preheat grill/broiler to 180C/350F.
Heat olive oil in a heavy-bottom fry pan that can go in your oven. Add onion and saute until golden, add greens and cook.
Mix eggs, milk, salt, pepper and cheddar cheese in a bowl and combine. Pour egg mixture over greens and onions. Strange tomatoes and bits of goat's cheese on top.
Allow to cook on bottom for a couple minutes, then move pan under broiler and cook a few more minutes, until Brown on top.
Remove from oven and slice into wedges. Serve with sauerkraut on the side.
