Olive oil 2 x red onions, sliced 3 teaspoons paprika 400g brown lentils (precooked or tinned) 700ml tomato sauce (passata) Salt and pepper to taste Juice of one lemon Chopped fresh coriander/cilantro and parsley
Heat oil in pan, then saute onions with paprika until caramelized. Add lentils, salt and pepper. Bring to a boil, then reduce heat to simmer for 20-30 minutes.
Add lemon and herbs, taste and adjust seasoning as desired.
Other beans work well in this dish, too.
