Mulberry Clafoutis


RECIPE:

Grease a glass pie dish with coconut oil or butter and heat oven to 220C. In a food processor mix:

50g almond meal 2 tablespons coconut flour 3/4 cup coconut cream or cow's cream 1/2 teaspoon vanilla 2 tablespoons honey or maple syrup 3 eggs

Mix well. Pour into prepared dish, top with mulberries (or other fresh or stewed fruit of choice, apricots are really good), then bake 20 minutes.

Top with whipped coconut cream or cow's cream and extra berries to serve.
