*3 ripe bananas *3/4 teaspoon vanilla powder *1/3 cup maple syrup *4 eggs *1 teaspoon baking soda (bi-carb) *1 tablespoon apple cider vinegar *1/2 cup almond butter (or peanut butter) *1/4 cup coconut oil or butter *1 cup rice flour or buckwheat flour *chipped coconut to top
Mix all ingredients in a food processor, pour into prepared cake tin, bake at 315C for 40 minutes. Leave to cool before turning out.
