I decided to make a dinner to support my glutathione levels: broccoli & cheddar soup with sauteed vegetables on the side, covered in tahini dressing.
Remember cruciferous veggies (broccoli family) and alliums, like onions and garlic, will increase glutathione levels. Studies show that whey protein does as well....so here's the recipe:
BROCCOLI & CHEDDAR SOUP
Saute onions and garlic in butter until transparent. Add salt, pepper, a pinch of nutmeg and fresh lemon thyme. Next, add chicken stock and chopped broccoli (you can peel the stems and chop small so there's no waste). Cook until broccoli is soft, then puree. Add cream and cheddar cheese, stir until well incorporated. Add a pat of butter at the end, stir and serve. Top with toasted seeds.
For the sauteed vegetables: heat coconut oil in a skillet, then add spring onions and zucchini, saute until zucchini is browned. Add seasoning-I used fermented onion, chili, garlic, tumeric and ginger paste. Th
en add greens, we used purple kale. I also added last night's roasted cauliflower and chokos (chayote). Once the veggies are cooked, top with tahini dressing- tahini, fresh garlic, lemon juice, salt and warm water to thin it out.
