My children love rice for lunch so we've been making tofu pockets stuffed with sushi rice and topped with seaweed salad.
Rice balls are also an easy lunch, just cook sushi or arborio rice with twice the amount of water or stock, then form into balls when cool enough to handle and put a little tamari on top.
We always fill the rest of the lunch with veggies, fresh fruit, nuts and homemade cakes or muffins. Do you have any good lunchbox ideas?
