We hosted a local foodswap at our place and were left with dozens of persimmons! They are a strange fruit. You have to let them get squishy before you eat them, otherwise they are very astringent. We just eat them with a spoon straight out of the skin or scoop out the flesh onto fresh homemade yogurt.
Persimmons are quite good for you - high in antioxidants, vit c, b vitamins, fiber, copper, manganese and beta-carotene.
I would love to know if you have a good recipe for using lots of extra persimmons.....
